The bigger difference to me is that WirePlumber uses a series of Lua scripts following a numeric hierarchy that are interpreted and executed sequentially at startup. This means that PipeWire sits between your application and sound drivers (the driver is called ALSA on Linux). But if you use only multimedia or want to stick to pure jack, you can replace it with pulseaudio and/or jack depending of your configuration.
